Milk. . .and Cookies

We love our pediatrician Dr. Brian Raley. I was checking his blog this morning. . .yes, he is very hip and cool and has a blog (w/vlogs even!!) and found this recipe for "lactation boosting" cookies. This is the dream of every nursing mother. . .an excuse to eat COOKIES! Hopefully, I will get to try this recipe out if/when we have another little one on the way. But, hey, it's cookies. . .even if you're not lactating. . .IT'S COOKIES!!!!

Housepoet's Famous Lactation Boosting Oatmeal, Chocolate Chip & Flaxseed cookies
Ingredients : 1 cup butter or marg (I use a light marg myself)
1 cup sugar
1 cup brown sugar
4 tablespoons water
2 tablespoons flaxseed meal
2 large eggs
1 teaspoon vanilla
2 cups flour (I use whole wheat flour to make them healthier...didn't notice a difference in taste
1 teaspoon baking soda
1 teaspoon salt
3 cups oats, thick cut if you can get them
1 cup or more chocolate chips (or Craisins or raisins instead, and/or chopped roasted walnuts or either kind of nut, or dark chocolate, etc.)
2 tablespoons of brewers yeast* (*NOTE* IT MUST BE BREWERS YEAST, NO SUBSTITUTIONS. Be generous, once I was use to the taste, I add 3Tbs)
Directions:
Preheat oven at 375 degrees F. Mix together 2 tablespoons of flaxseed meal and water, set aside for 3-5 minutes. Cream (beat well) margarine and sugar. Add eggs one at a time, mix well. Stir flaxseed mixture and add with vanilla to the margarine mix. Beat until blended. Sift together dry ingredients, except oats and chips. Add to margarine mixture. Stir in oats then chips. Scoop or drop onto baking sheet, preferably lined with parchment. The dough is a little crumbly, so it helps to use a scoop. Bake 8-12 minutes, depending on size of cookies.
Preparation time: 15 minutes
